Catching up

Catching up on some posts this morning....
These were cute little cookies that I made for Max's class for valentine's day. The dough was almost like a rugelagh dough. I filled them with raspberry jam (they are supposed to be envelopes, in case you can't tell)...

Nutrition Coach!

Continuing on my quest for knowledge, I've recently been certified as a Children's Nutrition Coach, again, by NESTA (National Exercise and Sports Trainers Association).

I'm just about there with my Fitness Nutrition Coach certification as well. I'm just waiting for the results of my exam.

Recently, I spoke with the staff at the pre-school where my daughter goes, about healthy eating and how they can incorporate healthier snacks at the school. It was a great, interactive talk.

Dinner Party

Here are some pics from a dinner party I cooked for a while back (I didn't take the pics, so they are not the greatest quality):


Asian Pear "Maki": Grated Asian pear and lime wrapped in prosciutto and dressed with a brown rice vinegar/balsamic vinegar reduction

Chicken Marbella: Chicken marinated with garlic, oregano, prunes, olives, capers, olive oil and vinegar, baked with white wine and brown sugar


Cardamom Ginger Pear and Carrot Puree: Steamed carrots and pears flavored with ginger and cardamom


Three Onion Cous Cous: Cous Cous, flavored with sauteed red onion, sweet onion and spring onions, dressed with currants


Chocolate Mousse: Decadent chocolate mousse and raspberry coulis, topped with whipped cream



I also served a spinach salad, with warm goat cheese "croutons" and a poppy seed vinaigrette, as well as another app - chorizo puffs, which is basically puff pastry, stuffed with cheese and chorizo, served with a honey dijon dipping sauce.
Needless to say, the party was a big success....
